It's my daily driver sampler (looking for the effects card if anyone has one spare) I have the S5000 and a scsi2sd card for it. It also uses non standard ram that maxes out at 192mb vs the Z4/Z8/MPC4000 using standard ram up to 512mb. The IDE was touchier than that of the Z8 and the PATA/SATA adapter that worked with the Z8 wouldn't work with it and I had to try two more to find one that did.

It has 3 IDE connectors for the DVD drive, hard drive and CF reader but no USB port like the Z series and MPC4000 so you can't use USB drives and keyboards with it. Akai has this backwards/forwards thing with their product development. So far I've fixed the power supply and set it up with an internal SSD with a PATA/SATA adapter. Due to this, I got interested in the MPC and snagged an MPC5000 with a power supply issue a few months ago at about half of what they normally go for.

A lot of code is based on what the display is capable of doing. My Z8 came with a bad display and I replaced it with an MPC2000XL display and watched some of youtube videos on the 2000XL and, surprise surprise, the workflow is pretty similar. Akai made lots of them so the supply is plentiful and there's almost always one for sale somewhere. Prices go all over the place for the 20XL. I may end up getting an mpc 2000 xl to compliment my s6000 but they seem to be slowly lifting in price along with the other vintage mpcs The Z series are actually a bit simpler overall and don't do direct to disk recording.
I have a Z8 as well and what is standard on the S6000 is optional on the Z8 and I find the playback quality a bit better on the S6000. Like no detail is spared from XLR input and output to digital IO options with word clock synchronization.

This sampler is definitely one of the most professional of the Akai professional series in both build quality and implementation. It can't play and record at the same time so it can only do mono and stereo but that's mono and stereo with an amazing array of processing options and effects if there's an effects card installed. The only thing it can't do as a recorder is overdub. The ADCs are great quality with balanced XLR inputs and I've done a few mixes directly to the S6000 as well as archiving some vinyl from the 50s. Mine came fully loaded and I've ended up using it more as a digital stereo recorder than as a sampler. Fully expanded with 256gb ram and the second voice card for 128 voices, it's basically an orchestra in a box.

I currently have a 100mb zip drive in addition to the 73gb internal drive which is another option for transferring files but a v6 scsi2sd should let you access the files via USB and is a better option these days, I just had the zip drive in my scrap pile. I really notice the quality when I do extreme downward transpositions. I think that came from those who just play back samples and don't do their own sampling. They sound great in spite of some peoples opinion on other forums. Floppy emulators are slow and the S6000 can record to hard disk so it's a much better option to use a hard disk. I put a 73gb SCSI drive in mine but I would consider scsi2sd if I do any more changes. They're a lot easier to use with a USB card but it isn't absolutely necessary.
